The Pioneer Women's Sloppy Joes (FODMAP)

The recipe I have modified to the FODMAP diet is based on The Pioneer Women’s Sloppy Joes. Considering I have Celiac Disease and also can not have any dairy products, I do not use the butter and rolls from the original recipe. I also precook the peppers because I also have Ulcerative Colitis and the vegetables need to be well cooked. I have provided the link to the original recipe.



Ingredients

  • 2-1/2 pounds Ground Beef

  • 1 whole Large Red Bell Pepper, Diced

  • Couple tablespoons of Garlic Infused Oil

  • 1-1/2 cup Ketchup (Fody Ketchup)

  • 2 Tablespoons Brown Sugar

  • 2 teaspoons Chili Powder (more To Taste)

  • 1 teaspoon Dry Mustard

  • 1/2 teaspoon Red Pepper Flakes (more To Taste)

  • Worcestershire Sauce, To Taste

  • 2 Tablespoons Tomato Paste (optional)

  • Tabasco Sauce (optional; To Taste)

  • Salt to Taste

  • Freshly Ground Black Pepper, To Taste

  • Kaiser Rolls (I do not use)


Heat large skillet or dutch oven over medium high heat. Add ground beef and cook until brown. Drain most of the fat and discard.


Precook red peppers while ground beef is cooking.


Add red pepper, garlic oil, Fody ketchup, brown sugar, chili pepper and dry mustard. Stir to combine and simmer for 15 minutes, adding salt and pepper to taste. Also add tomato paste, Worcestershire, and Tabasco if desired. Taste and adjust seasonings as needed.
